Foods to Protect from Disease and Aging.

Eating a healthy diet goes a long way toward maintaining a healthy body. Taking that a step further, eating the right foods helps slow down the aging process.  Some foods are good for your heart; others may be best to improve your vision or skin. For example, eating a diet of fruits, vegetables, nuts, fish and whole grains protect against heart disease. Specific kinds of fish contain high amounts of Omega 3 fatty acids and protect the heart and other organs. Your vision will benefit from the addition of  beta-carotine, zinc and Vitamin C. Foods high in anti-oxidants help reduce risks of cancer, as well as premature aging.  When you choose the vegetables to buy, remember to include 5 or 6 servings of colored fruits and vegetables in your daily diet.

There is no reason to avoid a healthy diet because all ingredients in same can create tasty dishes to please your palate. Below is one such recipe that offers plenty of protection from various diseases, is good for the skin and works to prevent aging.

Salmon a la Orange with Spinach & Brown Rice Casserole

2 Salmon Filets
2 Tbsp. Olive Oil
1/2 Cup Orange Juice
1 Orange

1 Pkg. Birds Eye Frozen Spinach
2 Cups Cooked Brown Rice (Instant is fine if you like it.)
1 Cup Grated Cheddar plus extra for topping

Several hours before serving, combine olive oil and orange juice and marinate the salmon filets for 3 + hours.

Cook the rice. Thaw spinach in the microwave and drain. Mix rice and spinach and add 1 cup of grated cheddar.  (You can season with garlic powder if you prefer.) Pour into greased casserole and bake for 20 min. Top with more grated cheese and bake long enough to heat the cheese.

Meanwhile, place salmon filets on greased baking pan and top with slices of orange. Bake at 350 degrees for 7 – 10 minutes per side or a bit longer if you prefer it well-done.  Serve the fish with the spinach rice casserole.
