Peach Cobbler and Summer Go Together

PEACHSummer in the South makes me think of peaches, and that leads me to peach cobbler.  Yummy! Is there a better dessert than warm cobbler with a scoop of homemade vanilla ice cream?  Those who know me understand that I rarely do things the normal way.  So it wouldn’t be surprising to know that the first time I made peach cobbler, I had no recipe and made it for a party of about 50 people. My husband and I were hosting his office staff to a summer picnic with food and games and fun. When he asked what I planned to serve, I told him and said I thought I’d try peach cobbler for dessert since there are so many trucks on the sides of the highways selling fresh peaches.  He looked at me at bit strangely but said nothing.  So I bought the peaches and got busy cleaning and planning and setting up for the party. I cooked the food and about an hour before the event began, I remembered the cobbler…the cobbler I had not made and for which, I had no recipe.  Oops!

I pulled out the peaches and peeled and sliced them and added some sugar.  With my head spinning, I grabbed the flour, baking powder, milk and butter and proceeded to put together something I thought would be cobbler.  I added a sprinkle of brown sugar to the top of it and threw it in the oven to bake. Frankly, I had no idea what I was doing but God was with me that day.  That cobbler was the best ever!  I could not tell you now exactly what the ingredients were or the measurements, but I learned a good lesson:  Plan meals in advance and be sure you know what you are doing!  These days, I do things the easy way:

Easy Peach Cobbler

Melt a stick of butter and pour it into a 9 X 9 inch pan.  Mix together 1 cup of milk, 3/4 cup of self-rising flour, and 1 cup of sugar.  Pour this over the butter and spread evenly.  Spoon 2 large cans sliced peaches and the syrup over the batter.  You can even sprinkle some cinnamon on top  if you like.  Bake at 350 degrees for 20 – 30 minutes until the crust looks golden and done.

I don’t remember the origin of this recipe but it’s simple and tasty.
